It is made from single-estate Los Altos agave slow-cooked in stone and brick ovens, crushed by roller mill for first-press free-run juice, and fermented in open-air tanks with agave fibres added for complexity.

Distilled twice in small copper pot stills and bottled unfiltered by hand at the source, it keeps its natural oils and seasonal character. Expect strong cooked agave, cinnamon, cinnamon candy and cracked black pepper, sweet and spicy on the palate, with a warm finish of cinnamon, pepper and sweet cooked agave.

A raw, overproof blanco built for purists, it makes a fine gift.

Sip it neat, or use it in a spirit-forward margarita.

Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.

Tasting Notes

Nose: Cooked agave, cinnamon candy and cracked black pepper.

Palate: Sweet and spicy cooked agave.

Finish: Warm cinnamon, pepper and sweet agave.

Specifications

Producer: Alma del Jaguar (Feliciano Vivanco, NOM 1414)

Style: Tequila Blanco, high proof, unfiltered, additive-free

Agave: Single-estate Los Altos blue Weber agave

Process: Brick ovens, roller mill, open-air fermentation, double copper pot distilled

Proof / ABV: 101 proof (50.5% ABV)

Region: Arandas, Jalisco, Mexico

Size: 750ml

How to Enjoy It

Sip it neat, or build a spirit-forward margarita.
