For Toasted Dovetail, the blend spends extra time in barrels with toasted interiors, adding further layers of vanilla and caramelised sugar to its rich, fruit-forward profile.

On the nose come toasted oak, vanilla bean, caramelised sugar, ripe orchard fruit and baking spice. The palate brings toffee, brown butter, brûléed citrus, nutmeg, charred oak and dark honey with concentrated heat at full proof, and the finish is long and warm, with lingering toasted oak, sweet spice and a touch of fruit.

The bottle wears Barrell's shield label with the Toasted Dovetail name and proof. It is a fine gift for a cask-strength enthusiast and a must for Dovetail fans.

Add water a little at a time to find your balance; the toasted notes bloom with dilution. Fans of the original Dovetail will recognise the fruit-rich base, now deepened by the extra time in toasted wood, which makes it fascinating to taste the two side by side.

Tasting Notes

Nose: Toasted oak, vanilla bean, caramelised sugar, orchard fruit and baking spice.

Palate: Toffee, brown butter, brûléed citrus, nutmeg, charred oak and dark honey.

Finish: Long and warm, with toasted oak and sweet spice.

Specifications

Producer: Barrell Craft Spirits

Style: American Whiskey blend, cask strength, unfiltered

Expression / Batch: Toasted Dovetail

Proof / ABV: 123.8 proof (61.9% ABV)

Cask / Finish: Dovetail blend (Madeira, port and bourbon casks) finished in toasted barrels

Region: United States

Size: 750ml

How to Enjoy It

Taste it neat, then add water a few drops at a time.
