convite-mezcal-una-750ml
Convite Mezcal Una 750ml

Convite Una is a pink mezcal made from Espadín agave and colored naturally with cochineal, from the single-palenque, family-owned Convite in Oaxaca. It is bottled at 80 proof (40% ABV).

Convite's artisanal process begins in a conical pit, which intensifies the flavor of the agave before it is crushed by a tahona, a stone wheel drawn by a mule. The mashed agave ferments naturally with no chemical additives and is distilled twice in copper pot stills. This ancient process has been carried out without electricity for decades and was perfected by the Hernández brothers.

Una is pink in color, with an herbal character and citric tones complemented by a light, sweet mineral touch. The cochineal, a natural dye made from insects that live on prickly pear cactus, gives it its rosy hue without artificial coloring.

Its pale pink bottle makes it a pretty and unusual gift.

Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.

Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.

Tasting Notes

Color: Natural pink, from cochineal.

Palate: Herbal, with citric tones.

Finish: Light, sweet minerality.

Specifications

Brand: Convite Mezcal

Style: Mezcal artesanal, joven

Agave: Espadín

Process: Conical pit, mule-drawn tahona, natural fermentation, double copper pot distillation

Color: Cochineal

Proof / ABV: 80 proof (40% ABV)

Region: Oaxaca, Mexico

Size: 750ml

How to Enjoy It

Serve it chilled with grapefruit, in a mezcal spritz or a pink Paloma.
