Bottled at 50.1% ABV, it is crafted by master distiller Cosme Tucho Hernández Martínez from agaves aged ten to fourteen years in San Baltazar Guelavila.

Jabalí, named for the wild boar, is one of the most challenging agaves to distil: it tends to foam during distillation and often needs extra care and multiple runs. Mezcal de Leyendas double distils it in a copper pot still after the traditional pit roast, preserving its distinctive character.

The aroma brings spices and dried chiles, and the flavour is meaty, with notes of overripe fruit, a bold, savoury mezcal that rewards slow sipping.

The squat bottle with its cork and twine stopper features a photographic label of the agave landscape and a yellow band naming the maguey. It is a prized bottle for mezcal explorers.

Sip it from a copita and let it open; its savoury depth makes it a fascinating counterpoint to lighter espadín mezcals.

Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.

Tasting Notes

Nose: Spices and dried chiles.

Palate: Meaty, with notes of overripe fruit.

Finish: Savoury and lingering.

Specifications

Producer: Mezcal de Leyendas (Cosme Hernández Martínez)

Style: Mezcal Artesanal, Blanco

Expression / Batch: Maguey Jabalí, limited production

Proof / ABV: 100.2 proof (50.1% ABV)

Cask / Finish: 100% Agave convallis, 10-14 years; double distilled in copper pot still

Region: San Baltazar Guelavila, Oaxaca, Mexico

Size: 750ml

How to Enjoy It

Sip it slowly from a copita at room temperature, with orange slices if you like.
