The mash bill is 64% corn, 24% rye and 12% malted barley with the distillery's own yeast strains. It is barreled at 110 proof in toasted, #4-char cooper-select barrels and aged in Rickhouses A and B. Wilderness Trail released it as a bottled-in-bond so fans of its Wheated Single Barrel can do a side-by-side comparison.

With rye in place of wheat, it is a notably spicy, entirely novel experience, offering a smooth flavor profile with the pleasing spice notes associated with rye grain.

The black-labeled bottle makes a fine gift for bourbon fans.

Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.

Bottled-in-bond whiskey must come from one distilling season, age at least four years in a bonded warehouse and be bottled at 100 proof.

The high-rye recipe gives a spicier profile than many Kentucky bourbons.

A splash of water opens up the spice and sweetness.

Tasting Notes

Character: Smooth and spicy.

Grain: High-rye backbone.

Strength: Bottled in bond, 100 proof.

Specifications

Distillery: Wilderness Trail, Kentucky

Style: Kentucky straight bourbon, bottled in bond, small batch

Mash Bill: 64% corn, 24% rye, 12% malted barley

Batch: Up to 12 barrels, single fermenter

Proof / ABV: 100 proof (50% ABV)

Region: Kentucky, USA

Size: 750ml

How to Enjoy It

Sip it neat or on a large cube, or mix a spicy Old Fashioned or Manhattan.
