Bozal Jabalí Reserva is an ancestral-method mezcal made from 100% wild Jabalí agave, also known as Agave convallis, in Sola de Vega, Oaxaca, distilled in clay pots and bottled at 47% ABV.
Bozal, Spanish for wild or untamed, works with family mezcaleros and wild and semi-wild agave from the uncultivated lands of Oaxaca, Guerrero and Durango. Its Reserva bottlings are made in small batches by the ancestral method, the most traditional way of making mezcal.
Jabalí is notoriously one of the most difficult agaves to work with: it naturally foams and expands during fermentation and distillation, which makes the process challenging and unpredictable, and single-agave Jabalí bottlings a showcase of the mezcalero's skill.
In its distinctive matte black bottle, it is a collector's gift for adventurous mezcal lovers.
Sip it slowly from a copita at room temperature.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
