Cabalgadura Salmiana is a mezcal from the deserts of San Luis Potosí, made from 14-year-old agave Salmiana and presented in a striking red glass bottle sculpted as a jaguar's head. It is bottled at 55% ABV.
The Salmiana is cooked for seven days in a 200-year-old oven of brick layered upon stone, with steam seeping through sabine wood floors, which keeps the truest flavour of the ripe agave. It is crushed first with a Roman concrete double tahona and then with a large single tahona stone, fermented naturally in open-air vats with pulque from the same Salmiana, and after three days distilled twice in a 200-year-old copper still.
The nose is bright, clean and vegetal, with crisp green bell pepper, fresh-cut grass and lemon peel. The palate brings a hint of olive and fresh serrano pepper, cooked Salmiana and a distinct creamy mouthfeel, finishing with lemon zest, green poblano pepper and a lingering elegance.
The sculpted jaguar bottle makes it a spectacular gift and display piece.
Sip it slowly from a copita.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
