CaliFino Extra Añejo is a long-aged tequila made from 100% Blue Weber agave, matured for seven years in American oak barrels and then given an additional year in a French Cognac barrel. It is bottled at 40% ABV.
Eight years in wood is an exceptional span for tequila, and the Cognac barrel finish adds polish to the deep American oak character. The result has won Gold at the New York International Spirits Competition in 2020 and Double Gold at the San Francisco World Spirits Competition in 2022.
It pours a deep, rich dark wood colour. The nose shows toasted barrel and sweet caramel, the palate layers oak, caramel and a light hint of chocolate, and the finish is warm and full-bodied.

Extra añejo is the most mature category of tequila, created in 2006 for tequilas aged more than three years in oak barrels of no more than 600 litres. The long rest softens the agave's natural pepper and brings out caramel, vanilla and dried fruit, which is why extra añejos are usually enjoyed neat, like a fine cognac or whisky.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
