Cazcanes No. 7 Añejo is an additive-free, estate-grown añejo tequila from NOM 1614, aged in re-charred American oak and bottled at 40% ABV.
Cazcanes is a boutique distillery that operates in harmony with the land and the natural spring that supplies it. Its water begins as rain high in the San Pedro de los Landeros mountains and travels through volcanic minerals before emerging at the Navichi Springs. Each 100% Blue Weber agave is hand-selected at peak sugar, cooked and roller-milled, fermented with natural wild yeast and distilled in alembic stills, and the añejo is aged to taste rather than to a set time.
It pours amber. The nose offers heavy sweet agave, vanilla and coconut, with a hint of nutmeg and chocolate. The palate brings warm spices and vanilla with sweet undertones of coconut, and the finish is soft and spicy, with hints of chocolate and vanilla and a sweet, long-lasting close.
The hand-blown bottle with its wooden stopper and twine makes it a handsome gift.
Sip it neat from a snifter.
Añejo tequila is aged between one and three years in oak barrels of no more than 600 litres, long enough to add colour, sweetness and spice while keeping the character of the agave, which makes it a natural sipping tequila.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
