FaneKantsini Chato is a highly artisanal agave spirit, bottled as destilado de agave, from the Tres Colibrí cooperative in the Sierra Sur of Oaxaca, led by Maestra Mezcalera Sósima Olivera Aguilar. Made from the rare, native Chato agave, it is bottled at 48% ABV.
FaneKantsini means three hummingbirds in the indigenous Chontal language, the same meaning as the cooperative's Spanish name, Tres Colibrí. Founded in 2012, the cooperative empowers local mezcaleros to share equipment and resources and to bottle small-batch traditional spirits from endemic, responsibly harvested wild agaves.
The Chato expression is prized by agave purists for showcasing an uncommon native variety, one rarely bottled on its own. Small-batch, traditional production keeps the character of the wild plant front and centre.
The tall, clear bottle carries a botanical agave illustration and the FaneKantsini name in red script, making it a special find for collectors and a way to support community-led production.
Pour it slowly from a copita and let its character open in the glass.
Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.
Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
