Insólito Añejo is an additive-free tequila from a blend of highland and lowland agave, aged 18 to 24 months in new American oak barrels at a distillery 7,200 feet up in the Sierra del Tigre mountains of Jalisco. It is bottled at 80 proof (40% ABV).
Insólito means uncommon. The tequila is made by brothers Octavio and Alberto Herrera at their Premium de Jalisco distillery (NOM 1558) in Mazamitla, the highest distillery in Mexico, where master distiller Alberto Herrera created it. The brand is backed by the American country band Midland, and founder Pete Kelly brought the partners together around a tequila distilled from fresh agave.
At that altitude, hot days and cool nights shape a slow fermentation, helped by natural spring water, and give the aging its own rhythm. The long rest in new American oak turns the blend of highland and lowland agave into a silky, complex spirit with rich notes of chocolate, prunes, toasted nuts, florals and cinnamon.
The bold red bottle, signed by the master distiller, makes it a striking gift, and the añejo makes an extraordinary Old Fashioned.
Añejo tequila is aged between one and three years in oak barrels of no more than 600 litres, long enough to add colour, sweetness and spice while keeping the character of the agave, which makes it a natural sipping tequila.
