Kaiyo The Peated is a limited, award-winning peated Japanese whisky matured in a combination of ex-Madeira wine casks and Japanese Mizunara oak, including a three-month period of ocean maturation, bottled non-chill filtered at 92 proof (46% ABV).
Kaiyō, whose name means "ocean", is a whisky brand built around maturation in Mizunara, the rare Japanese oak prized for its sandalwood, coconut and incense character. The Peated is made from 100% malted barley, using imported Scottish peated malt, and is distilled and matured in Japan. After its time in Madeira casks and Mizunara oak, the casks spend three months at sea, where the motion of the ocean and the salt air add their own influence.
A lightly smoky sea-breeze aroma entices on the nose. The palate opens with bolder peat smoke underpinned by vanilla and coconut, finishing with a mouthwatering salt-and-pepper accent. Adding water pulls it all together, creating an effect like vanilla cookies sprinkled with coarse sea salt, plus a puff of peat smoke. It earned 92 points from Kara Newman.
Its striking label with bold red calligraphy makes it a handsome gift for lovers of Japanese whisky and peat alike.
Japanese whisky has earned a worldwide reputation for balance and precision, and limited releases from its historic distilleries are among the most sought-after bottles for collectors.
