Newton Single Vineyard Spring Mountain Cabernet Sauvignon 2016 is a Napa Valley Cabernet from the Spring Mountain District, bottled at 14.5% ABV.
It is incredibly concentrated, bold yet bright, with a pronounced licorice finish.
An intense violet hue leads to a nose dominated by red fruit and spice.
Pomegranate, sage, thyme and rosemary blend seamlessly with a subtle mineral quality.
Newton Vineyard was founded in 1977 on Spring Mountain, and its steep terraced hillside vineyards are the heart of the estate. The 2016 earned 95 points from James Suckling and 94 from Wine Spectator, and with several years in bottle it is drinking beautifully while still able to age.
Good wine rewards a little care in serving. Whites and rosés show best chilled to around 45 to 50°F, while reds are at their most expressive slightly below room temperature, around 60 to 65°F. Opening the bottle and letting it breathe for a few minutes, or pouring it into a decanter, helps the aromas open up.
