Purasangre Añejo is an additive-free tequila from Atotonilco El Alto in the Highlands of Jalisco, made by native highlander and Master Distiller Enrique Fonseca, aged in French oak casks and bottled at 40% ABV.
Fonseca uses a distinctive dual distillation: the earthy Atotonilco agave is first distilled in stainless steel alembic pot stills, then a second time in copper pots. The result is rich and balanced, with a distinctive agave flavour inherent to Atotonilco's 5,200-foot elevation.
In keeping with Casa Xalixco's house preference, the añejo is barrelled in French oak casks, adding a layer of sophistication to its pronounced agave character. It earned 94 points and a Gold Medal, rated Exceptional, at the Beverage Testing Institute in 2013.
A refined Highland añejo, it makes a fine gift for tequila lovers.
Sip it neat or over a large ice cube.
Añejo tequila is aged between one and three years in oak barrels of no more than 600 litres, long enough to add colour, sweetness and spice while keeping the character of the agave, which makes it a natural sipping tequila.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
