Resilient 17 Year Old is a bourbon from Resilient's Finishes series, distilled in 2004, aged in newly charred American oak and finished in Oloroso sherry casks before bottling in 2021. This bottle is 119.08 proof, from a run of about 250 bottles.
The Finishes series takes long-aged bourbon from new charred 53-gallon barrels and finishes it in Oloroso sherry butts or casks, tawny port casks or Madeira casks. This release was finished in Oloroso in June 2019, giving the mature bourbon more than two years to take on the sherry's rich fruit and nut character. Its mash bill is 84% corn, 8% rye and 8% malted barley.
Plum, dark chocolate and almond toffee lead the way, and the finish leans toward plum, sultana and cardamom, fading slowly with dark chocolate.
The tall bottle features Resilient's flag-inspired label in deep red, with the barrel details printed beneath. It is a striking gift for a bourbon collector who loves sherry-finished whiskey.
At cask strength, a few drops of water open up the dried fruit and spice.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
