Salvadores Cirial is an unaged joven mezcal from Tlacolula de Matamoros, Oaxaca, made by the Salvadores family from wild Cirial (Agave karwinskii) roughly 13 years old and bottled at 48% ABV (96 proof).

The brand was registered in 2020 by Flavio Pérez Méndez and his family, whose roots in mezcal production trace back to the early 1900s. The agave is cooked in an earthen pit oven, crushed by tahona and double distilled in copper. It has earned a BTI Gold Medal, a San Francisco World Spirits Competition Silver Medal and 93 points from Tastings.com.

Aromas of orange blossom, jasmine, tobacco and green karwinskii with mushroom undertones lead to a palate of cooked agave, ripe red apple, mesquite and savoury green vegetal notes, with a strong umami character. The finish is warm, with parsley, black pepper and roasted corn.

The minimalist textured label makes it a refined gift for mezcal lovers.

Sip it slowly from a copita.

Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.

Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
