T'maro Amaro is a California amaro made from a date spirit, seasonal citrus and natural botanicals, and sweetened only with organic dates. It is bottled at 35% ABV in a 700ml bottle and is described as the first and only date-sweetened amaro.
T'maro was created by chef Elizabeth Falkner and spirits veteran Heather Freyer, and its spirits are made to their specifications by Griffo Distillery in Petaluma, California, using dates from the Coachella Valley. The botanicals are macerated into the date spirit and then lightly filtered, with no added sugars, artificial flavours or colours.
The result is an amaro of citrus, soft spice and desert fruit caramelised by the sun. Bright citrus with warm spice undertones opens the nose, alongside bronze fennel and bay laurel.
On the palate come herbaceous notes, caramelised desert fruits and candied oranges, with a soft, natural sweetness from the dates.
It is a gentle, distinctive amaro for sipping neat and a lovely base for a T'maro Black Manhattan.
