Don Cayo Extra Añejo is a 100% agave tequila from El Arenal, in the Valley of Tequila, aged for five years in French white oak barrels. It is bottled at 40% ABV.
Don Cayo was founded in 1954 in honour of the family patriarch, Don Cayetano González, and uses agaves grown around El Arenal. Five years in French oak, well beyond the three-year minimum for an extra añejo, gives the tequila its depth.
It offers an intense aroma of honey and fruit, complemented by nuances of wood and caramel. The flavour is complex, with sweet notes, fruit and cooked agave, and a velvet-smooth texture.
The decanter-style bottle with its cream label and dark stopper makes it an elegant gift.

Extra añejo is the most mature category of tequila, created in 2006 for tequilas aged more than three years in oak barrels of no more than 600 litres. The long rest softens the agave's natural pepper and brings out caramel, vanilla and dried fruit, which is why extra añejos are usually enjoyed neat, like a fine cognac or whisky.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
