Fósforo Tobalá Penca is a mezcal made by mezcalero Aarón Alva Sánchez in San Nicolás Huajuapan, Puebla, from cultivated tobalá agave that grows 8 to 15 years, bottled at 43% ABV.
The agave roasts 5 to 8 days in underground pits, ferments, and is double distilled in copper. The mezcal then rests 1 to 3 months in glass with agave penca leaves.
The palate mingles smoke and salted butterscotch, finishing long with mesquite smoke, clove and black pepper.
