The tequila starts with organic Blue Weber agave from a single family-owned estate in the foothills of an ancient volcano in Jalisco. AguaDios keeps the recipe deliberately simple, with just two ingredients: water and agave. The Ensamble, meaning blend, brings together tequilas aged 15, 8, 6, 3 and 2 years, so the depth of the oldest component is balanced by the brighter agave character of the younger ones.
Maturation happens in two stages. The tequilas are first aged in French Limousin and American white oak, then given a final finish in Mizunara barrels, a rare and costly Japanese oak prized by whisky makers for the incense, sandalwood and coconut notes it can add. The finished blend is bottled at 45% ABV, a strength that carries its rich oak and spice while keeping the agave clearly in view. The square, cork-stoppered bottle and its blue presentation box make it as striking on a shelf as it is in the glass.
