123 Organic Tequila Añejo, known as Tres, is a certified organic añejo tequila made from 100% Blue Weber agave in Amatitán, Jalisco, aged eighteen months in white oak barrels and bottled at 80 proof (40% ABV).
123 was created by master distiller David Ravandi. Tres, number three in the collection, follows Uno Blanco and Dos Reposado with a longer maturation for richer oak influence and greater depth. The agave is grown using certified organic farming and hand harvested, slowly cooked in traditional stone ovens, fermented and double distilled before its eighteen-month rest in oak. The brand tells the story of three roosters, tototl, greeting the dawn with songs of renewal as the Blanco awakens from its slumber in the barrel, reborn as Añejo.
After eighteen months in oak, the wood character of Tres is more prominent. On first nosing it is heady with tannin and wood oil, which fades with time in the glass to reveal caramel and chocolate notes, with toasted oak, vanilla and warm spice around a core of roasted agave. It really opens up when given time, and Tasting Panel Magazine awarded it 96 points.
A limited production in its hand-illustrated bottle, it makes a beautiful gift.
Añejo tequila is aged between one and three years in oak barrels of no more than 600 litres, long enough to add colour, sweetness and spice while keeping the character of the agave, which makes it a natural sipping tequila.
