2XO The Innkeeper's Blend is a small-batch Kentucky straight bourbon from master blender Dixon Dedman, bottled at 104 proof (52% ABV).
It is the second release in 2XO's Icon Series, blending four batches of Kentucky straight bourbon aged at least six years.
Part of a six-year-old high-rye bourbon was re-barrelled into new #3 and #4 char oak, the 'Two Times Oak' that gives 2XO its name.
The blend draws on a high-rye mash bill of about 35% rye and a low-rye mash bill of 16 to 18% rye, bringing caramel, vanilla, plum, cherry and light black pepper.
It honours the Dedman family's hospitality history as owners of the Beaumont Inn on Kentucky's Bourbon Trail. We also carry other 2XO blends, including The Kiawah Blend and Gem of Kentucky.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
