5 Sentidos Cuishe, batch TELCU07, is a destilado de agave made by maestro mezcalero Eleuterio "Tío Tello" Pérez Ramos from wild cuishe, a variant of Agave karwinskii, and bottled at 45% ABV.
Cinco Sentidos is the label from El Destilado restaurant in Oaxaca. Its producers use no modern machinery and rely on their senses at every step of production, which is where the name comes from, and the bottles are labelled destilado de agave rather than mezcal.
For this batch the agave was roasted for five days in conical ovens over mesquite and oak, cut by hand and mashed with mesquite hammers. It fermented in cypress tanks and was distilled in a copper alembic still.
Cuishe grows tall and columnar, more like a tree trunk than the typical rosette agave, and its spirits are known for their mineral, vegetal character. Each 5 Sentidos release is a small, single batch, so every bottle captures one producer, one agave and one season.
