Aldez Mezcal Ensamble is an unaged artisanal mezcal from the small village of San Juan del Río in Oaxaca, made from a combination of three agaves and bottled at 90 proof (45% ABV).

The ensamble brings together Espadín (Agave angustifolia), Jabalí (Agave convallis) and Tobalá (Agave potatorum). Each brings its own character: Espadín gives an earthy backbone, Tobalá, a small wild agave, adds sweetness and fruit, and Jabalí, a notoriously difficult agave to work with, contributes spice and minerality. Aldez produces its mezcal sustainably and makes it in the traditional Oaxacan way, with natural fermentation and copper pot distillation preserving the agave's earthy, smoky and fruity character.

The nose opens with cooked agave and campfire. The palate brings subtle smoke, agave and earth, with sweet Tobalá, spice and minerals, and the finish is long and semi-sweet.

Approachable enough for those new to mezcal yet complex enough for connoisseurs, it makes a fine gift for agave lovers.

Sip it neat from a copita with orange slices and sal de gusano.

Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.

Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
