Alto Valle Tradicional is an agricole-style Mexican rum from the Valles region of Jalisco, distilled from local piloncillo by Esteban Morales of La Venenosa and bottled at 84 proof (42% ABV).
For more than 15 years, Esteban Morales has traversed the state of Jalisco for his work with Mexican agave spirits like La Venenosa Raicilla and La Higuera, crossing many times through the Valles de Jalisco, where sugarcane thrives in volcanic, mineral-rich soil. Alto Valle was born there, its name reflecting the significance of altitude and soil in the sugarcane's growth.
Because the sugarcane harvest lasts a short four months, Alto Valle is made from piloncillo, unrefined cane sugar reduced from the Morada, Criolla and Verde varieties and sourced from local families, so production can continue throughout the year. Piloncillo retains the character of the sugarcane, and the rum is distilled in a hybrid copper and stainless still.
The result mirrors the fresh, herbaceous profile of French Caribbean rhum agricole while expressing the terroir of Jalisco. Aromas of spun sugar and pineapple meet hints of saline, and the palate brings wet grass, earth, citrus and floral notes. Light, fresh and clean in texture, it finishes with a pink peppercorn spice.
Alto Valle is a natural for a Daiquiri, a Ti' Punch or a rum highball, and it is lively enough to sip on its own.
Aged rum is one of the most diverse spirits in the world, shaped by the sugarcane, the still and the warm climates where it matures, which speed up the interaction between spirit and wood.
