Amarás Espadín is an artisanal joven mezcal from San Juan del Río, Oaxaca, made from 100% Espadín and bottled at 82 proof (41% ABV).

Amarás means "you will love." Founded by Jorge Rodríguez-Cano and Santiago Suárez Córdova, the brand has worked since 2010 with renowned Oaxacan maestros mezcaleros, and its Espadín is a collaboration among five mezcaleros in the village of San Juan del Río. Espadín grown in the surrounding hills for eight to ten years is roasted for five days in conical stone ovens over oak, crushed by an Egyptian-style tahona, naturally fermented with local yeasts in pine-wood vats and double distilled in copper pot stills. It is sustainably produced.

Bergamot and blossom perfume the nose, unfolding into sandalwood and the sweetness of ripe mango, with light smoke, citrus and pepper. A velvety, salted texture takes over on the finish.

The cream-and-copper hexagon label makes it an elegant gift.

Mezcal is made by roasting agave hearts, traditionally in earthen pits, then crushing, fermenting and distilling them, a process that gives the spirit its characteristic smoky depth. Each agave variety and each village brings its own character, which is why enthusiasts love exploring small-batch bottlings.

Mezcal and other agave spirits are traditionally sipped from a copita or a small clay cup, in small sips, often alongside orange slices dusted with sal de gusano. Many are made in tiny batches by individual families, so each bottle is a snapshot of a particular place, agave and season.
