Aquifer Plateau is a triple-distilled New Zealand vodka from the National Distillery Company, cut to proof with ancient volcanic aquifer water from the country's central plateau and bottled at 80 proof (40% ABV).
Aquifer Plateau is a vodka defined by its water. It is cut to proof with water drawn from an aquifer beneath three active volcanoes in a protected national park on the central plateau of New Zealand's North Island, water that has filtered through ancient volcanic rock for some 10,000 years. This vodka was ten thousand years in the making.
The base spirit was chosen through extensive blind tastings by the National Distillation Company's panel, made up of its team and some of New Zealand's best winemakers, brewers and bartenders. It is a high-quality ethanol made from casein whey, a by-product of grass-fed New Zealand cows, rather than the usual molasses, cane sugar or grain. The lactose in the whey is fermented in batches, recovered by distillation and concentrated through a four-stage process for a pure, clean spirit.
The result is a bright, classic vodka full of crisp, clean flavors, with a faint minerality from the volcanic water and a smooth finish. The same distillery also makes a family of New Zealand gins, including a Dry, a Native and a Navy Strength.
Hand crafted from time-honored traditions and packaged in a handsome, weighty bottle, it is lovely sipped neat or over ice, and it makes a clean Martini, a Vodka Soda or a Moscow Mule.
