It is made by renowned distiller and still-builder Don Manolo Macías, who founded INOX in 1996 to build tequila stills for other producers and opened his own dream distillery, Hacienda Casa Macías, in 2018.
The agave is slow roasted, gently pressed and fermented the traditional way, then distilled and bottled on site at the distillery. The Blanco is bottled unaged, so the clean, bright character of the cooked agave comes through in every pour.
