Balcones Baby Blue is a pot-distilled straight corn whisky from Balcones Distilling in Waco, Texas, made from 100% roasted blue corn and bottled at 92 proof (46% ABV).
Balcones began distilling in 2009 in an old welding shop under a bridge in Waco, and Baby Blue was the first Texas whisky legally produced since Prohibition. The distillery has always sought out ingredients for their richness in flavor, and the rich, oily roasted blue corn, pot distilled and aged over 12 months in used American oak, adds new sophistication to the corn whisky tradition while keeping the freshness of classic American distilling.
