Barber Lee White Rum is an artisanal, small-batch rum from Northern California, double distilled from piloncillo, unrefined Mexican cane sugar, and bottled at 85 proof (42.5% ABV).
Barber Lee ran a whole series of distillation experiments with different kinds and combinations of sugar and sugar by-products before settling on the base for its rum: blackstrap molasses, fancy molasses, demerara, muscovado and Chinese brick sugar among them. Piloncillo won. As pure as sugar cane gets, it gives a much deeper flavor than standard molasses-based white rums.
Made in Petaluma, California, the rum is simply double distilled from that piloncillo and bottled unaged, with nothing standing between you and the sugar cane. The same base goes into the distillery's Aged Rum, which spends three years in used whiskey barrels and a further year in a port cask before it is bottled at 50% ABV to keep its dense, decadent flavor.
This is a full-flavored white rum, with hints of caramel on the aroma and toasty, dark-sugar flavors on the palate, finishing clean. It is exactly what you need to step up the quality of your tiki cocktails, Mojitos and Daiquiris, with enough strength at 42.5% ABV to hold its own in any mixed drink.
