Bimini Overproof is the unfiltered, full-strength version of Bimini Gin from Round Turn Distilling in Biddeford, Maine, bottled at 111 proof (55.5% ABV).
Bimini Overproof has more flavor than regular Bimini Gin because none of the botanical oils are filtered out. Oils dissolve in alcohol but separate from water, so when the original Bimini is diluted to 94 proof the oils begin to fall out of solution and make the gin cloudy; the distillery filters out just enough oil to keep it clear. At 111 proof, Bimini Overproof stays crystal clear at room temperature with no filtration necessary, which means every drop of flavor extracted from the botanicals goes into the bottle. Bimini takes its name from Hemingway's Islands in the Stream and was created by Darren Case and Kristina Hansen to capture the taste of summer vacation in Maine.
Because filtration removes some botanical oils more than others, Overproof has a different balance: the juniper is more robust upfront, and the hops are more clearly defined in the middle palate, alongside the house grapefruit, coriander and chamomile.
A bold, modern American gin for cocktail lovers.
Round Turn Distilling was founded in 2015 in a 150-year-old textile mill on the Saco River, five miles from the Maine coast. The team also recommends substituting Bimini for light rum in tropical drinks, and the Overproof's extra intensity makes it especially good in Tiki-style cocktails.
