Bull Run Distilling Pacific Rum is a Northwest-style rum from Portland, Oregon, made from Hawaiian cane sugar and aged in former bourbon barrels, bottled at 89 proof (44.67% ABV).
Bull Run Distilling Company was founded in the spring of 2010 by acclaimed Portland distiller Lee Medoff and business partner Patrick Bernards, a what-if conversation over cocktails that grew into a distillery known for whiskey, specialty vodka and barrel-finished spirits. It is named after the Bull Run watershed, the iconic Portland landmark that supplies the city's pristine soft water, a nod to its sense of place and to water's key role in distilling.
Pacific Rum was one of the first spirits to flow through Bull Run's stills. It is distilled from Hawaiian turbinado sugar, whose rich, unrefined sweetness travels north to Portland, and it is aged in former bourbon barrels that add a chocolate tone to its natural spice. Unlike heavy Caribbean rums, it is crafted for a light, versatile profile that balances the raw energy of cane sugar with the refining influence of bourbon wood.
Expect brown sugar and soft spice with a chocolate note from the bourbon wood, light and lively on the palate.
It is a great companion to any citrus: mix a Daiquiri, a rum and tonic with lime, or a Mai Tai, or sip it over a large ice cube.
Aged rum is one of the most diverse spirits in the world, shaped by the sugarcane, the still and the warm climates where it matures, which speed up the interaction between spirit and wood.
