The bourbon is named for the Lowcountry's own Anita Pollitzer. Burnt Church's signature whiskeys use local grains from Palmetto Malt or Marsh Hen Mill, both in South Carolina. Carolina Gold rice, the heirloom grain that once made the Lowcountry famous, joins corn, wheat, barley, rye and oat in a rare harmony of grains. Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
