Johnny Fever Small Batch is a four-grain straight bourbon from Burnt Church Distillery in Bluffton, South Carolina, made from 65% corn, 18% rye, 12% malted barley and 5% wheat, bottled at 92 proof (46% ABV).
Burnt Church Distillery was founded in 2019 by Billy J. Watterson and Sean Watterson, just 10 miles from Hilton Head. Johnny Fever, the flagship, was created in homage to a man who made a special impact on Billy Watterson, his father-in-law, who loved pheasant hunting, good bourbon and family most of all, which is why the bottle is topped with a shotgun shell. The four-grain mash uses yellow dent corn, Wrens Abruzzi rye, wheat and two-row barley, all locally grown, with the barley malted in South Carolina. The warm Lowcountry climate draws the whiskey deep into the wood.
Smooth and approachable, it develops rich amber hues and layers of caramel, oak and spice, with enough rye spice to stand up without scorching anything.
The teal label and shotgun-shell topper make it a great gift for hunters and bourbon fans.
Bourbon must be made in the United States from a mash of at least 51% corn and aged in new charred oak containers, and straight bourbon must be aged at least two years. Those rules give bourbon its characteristic sweetness, with caramel and vanilla drawn from the charred barrels.
