Batavia Arrack is the rum of Indonesia, a distillate of 100% sugarcane molasses produced exclusively on Java and dating back to the 17th century. What sets it apart from rum is the fermentation: the molasses wash ferments in wooden vats with local, traditional wild yeast grown on red rice cakes. It is then distilled twice in very old-fashioned pot stills using ancient Chinese distillers' methods.
The arrack is shipped to Amsterdam, where it is laid down in large oak casks and blended to a secret recipe by the master blender, then bottled in Schiedam. The ageing in teak and oak results in fantastic rich, deep flavours that linger on the palate.
