Caballito Cerrero Azul Blanco 46 is an artisanal 100% blue Weber agave spirit from Amatitán, Jalisco, labelled destilado de agave rather than tequila, and bottled at 46% ABV.
Caballito Cerrero has been crafted by the family of Don Alfonso Jiménez Rosales since 1968, with a deep commitment to authentic, time-honoured methods. That dedication has led the distillery to step outside the standard definitions of the Tequila Regulatory Council, so its spirits are labelled agave distilled. The agave is cooked in a brick steam oven, crushed in a double-pass mill, fermented with wild and proprietary yeasts and natural spring water, and distilled in a combination of stainless and copper stills.
Unaged and bottled at 46%, it bridges tequila and mezcal, with pure, vivid blue agave character.
A rare traditional agave spirit, it makes a fine gift for enthusiasts.
Sip it neat to taste the agave.
Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
