Caballito Cerrero Chato Reposado is a 100% Chato agave distillate from Amatitán, Jalisco, rested six to nine months in American oak and bottled at 46% ABV (92 proof).
Chato is a subvarietal of Agave angustifolia endemic to Jalisco and is generally more vegetal than Blue Weber. In 2018 the family behind Caballito Cerrero chose to market its spirits as destilado de agave, a standalone agave distillate distinct from tequila and mezcal. The agave is steam cooked in a 150-year-old brick oven, mechanically milled, open fermented for seven days in stainless steel and distilled twice before resting in American oak barrels.
The nose shows candied apple and caramel, with smoke, earth, oak and leather, and the palate brings sweet agave, vanilla, cinnamon and pear. The Chato blends seamlessly with its time in oak.

Reposado, meaning rested, is tequila aged between two months and a year in oak, which gives it a pale gold colour and a gentle touch of wood while keeping the agave bright and lively.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
