Barr Hill Vodka is distilled entirely from raw Northern Vermont honey by Caledonia Spirits in Montpelier, Vermont, bottled at 40% ABV.
It is a tribute to hardworking beekeepers: each late summer the distillery takes delivery of hundreds of barrels of pure raw honey, and every bottle contains about three pounds of it. The recipe rests on two principles: the honey is never heated before fermentation, and the spirit is never distilled more than twice, preserving the wild yeast and rich aromatics of the nectar. Caledonia Spirits was founded by veteran beekeeper Todd Hardie.
