Building on founder Marni's knack for using high-proof alcohol to capture distinctive flavors and aromas, CALI experimented until, after dozens of refinements, version 85.31 became an exceptionally smooth, luxurious sipping whiskey. The richness of the oak plays against oils, esters and aromas drawn from a carefully balanced blend of herbs, spices and botanicals. Officially classified by the TTB as Whiskey Finished with Spices, it is smoother than a frontier whiskey but more complex and flavorful than a traditional Kentucky bourbon.
