Calle 23 Blanco is an additive-free highland tequila from San José de Gracia, Jalisco (NOM 1545), crafted by French biochemist and master distiller Sophie Decobecq and bottled at 80 proof (40% ABV).

Sophie Decobecq studied biochemistry and engineering in France, learned to distill agave in South Africa, and moved to Mexico in 1999; she oversees every stage of production with a scientist's precision. Highland agave is cooked in stainless steel autoclaves, fermented in stainless tanks with a base yeast plus a second yeast used for the Blanco, double distilled in pot stills with copper, and filtered with cellulose after each distillation. The brand is named for the CALLE 23 street sign she saw across from the bar where her team celebrated perfecting the recipe.

Light, pretty aromas of florals, honeysuckle and herbs precede crisp apple, sweet tropical pineapple and ripe pear, with roasted agave and a hint of black pepper on the finish for lift and freshness.

The screen-printed red agave leaves make it a striking gift.

Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.

Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
