Camazotz Oaxacan Rum is an unaged aguardiente de caña made from fresh-pressed sugar cane juice by Maestro Leoncio Gaspar in the Sierra Mixe of Oaxaca, bottled at 96 proof (48% ABV).
Made in the Sierra Mixe, about five hours northeast of the city of Oaxaca, Camazotz is what locals call aguardiente de caña. The sugar cane is grown by the Gaspar family without pesticides, raw pressed by hand, then fermented in open barrels using only wild airborne yeasts and distilled in 300-liter copper pot stills. With nothing added or taken away, it stays true to its Oaxacan aguardiente heritage, sharing a kinship with rhum agricole and cachaça while drinking more elegant and smooth than its counterparts. The name honors Camazotz, the bat god of Maya and Zapotec lore, shown on its vivid label.
The moment it is poured, a huge bouquet of fresh sugar cane fills the room. Mildly sweet and grassy, it shows vegetal notes, wood tones and touches of caramel, with pineapple funk on the back end and a long, saline finish.
The colorful bat-god label makes it a striking gift for rum and agave lovers alike.
Aged rum is one of the most diverse spirits in the world, shaped by the sugarcane, the still and the warm climates where it matures, which speed up the interaction between spirit and wood.
