Cambio Cellar Series El Corazón is a small-batch, unaged blanco tequila from the 2023 release, bottled at 100 proof (50% ABV) to capture the pure, raw spirit of the agave before any wood can intervene.
It was created by chef and sommelier John des Rosiers with a highly meticulous process. This batch was fermented at extremely high sugar levels, more than double what other distilleries work with, and at very low temperatures, roughly a third of traditional tequila fermentations. In distillation only the heart, el corazón, was captured, with the heads and tails discarded.
Cambio's approach starts with whole blue Weber agave piñas roasted slow and low, juice extracted with a traditional tahona stone wheel, and slow, cold fermentation with wine yeasts, a winemaker's method applied to tequila.
A rare, collector-worthy blanco, it makes a fine gift for tequila purists.

Blanco tequila is bottled unaged or rested for less than two months, so it shows the agave at its purest: bright, peppery and fresh. It is the classic choice for margaritas and palomas, and a good blanco is just as rewarding sipped neat.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
