Cambio Reposado is an additive-free highland tequila that rests one month in Burgundy and Bordeaux wine barrels, then five more months in French oak Chardonnay casks, before bottling at 92 proof (46% ABV).
Cambio, Spanish for change, set out to make tequila to a higher standard rather than in greater volume. After a search of Jalisco's distilleries, the brand partnered with ZB Distillery (NOM 1605), which was willing to adopt its slower production methods and its practice of finishing every release in secondary barrels. The whole Blue Weber agave comes from Ruvalferti, run by the Ruvalcaba family of Arandas, who have farmed the highlands for more than 35 years.
The piñas are roasted slow and low, and the juice is pulled from the cooked fibers with a traditional tahona stone wheel. Cambio uses non-traditional yeasts and longer cooking, fermenting and distilling times than usual, and the finished blanco is the foundation for this reposado. The wine-barrel sequence, rarely seen in tequila, layers fruit, butterscotch and warm spice over the roasted highland agave.
Cambio Reposado earned 94 points from The Tasting Panel. It is a striking gift for anyone who enjoys wine as much as tequila.
Sip it neat to taste how the wine casks shape the agave.
Reposado, meaning rested, is tequila aged between two months and a year in oak, which gives it a pale gold colour and a gentle touch of wood while keeping the agave bright and lively.
