Cantera Negra Añejo is a 100% agave sipping tequila aged at least 18 months in a delicate blend of ex-Cognac and ex-bourbon casks, bottled at 80 proof (40% ABV).
It is never bottled until it passes the stringent taste-testing standards of the family tasting panel. The añejo maintains the subtle citrus and earthy hints of the brand's Silver and Reposado, while the aging process highlights subtle new flavors resembling the cooked agave itself, with a more woody and vanilla ending. It earned a Gold medal at the 2017 San Francisco World Spirits Competition.
Remarkable notes of cinnamon, toasted oak and vanilla run through the nose and palate, and the tequila offers a remarkably smooth taste and a warm finish. Its flavor is so distinctive as a sipping tequila that it stands apart from typical añejos.
The square bottle with its black-stone stopper makes a handsome gift.
Añejo tequila is aged between one and three years in oak barrels of no more than 600 litres, long enough to add colour, sweetness and spice while keeping the character of the agave, which makes it a natural sipping tequila.
Tequila can only be made from blue Weber agave in five designated Mexican states, chiefly Jalisco, and the finest bottlings are made from 100% agave. Sipping tequila is best enjoyed from a narrow-rimmed glass that concentrates the aromas, at room temperature and without salt or lime, so the character of the agave and the barrel can come through.
