Caravedo Acholado is a Peruvian pisco blending Quebranta and Torontel grapes, single distilled to proof at Destilería La Caravedo in the Ica Valley and bottled at 80 proof (40% ABV).

Destilería La Caravedo was founded in 1684 in Peru's Ica Valley, in the foothills of the Andes, and is described as the oldest working distillery in the Americas. Master Distiller Johnny Schuler crafts its piscos from estate-grown grapes with traditional methods. This expression was formerly known as Pisco Portón.

Acholado is the Peruvian style that blends grape varieties. Each bottle takes about 3 kilos (7 lbs) of Quebranta and Torontel grapes. It is distilled from 100% fully fermented grape juice, pure wine and never pomace, in both traditional falca stills and alambique copper pot stills, single distilled straight to 40% ABV. It then rests for at least nine months in stainless steel, four months for each varietal and five more after blending, with no additives of any kind: no color, water, sugar or wood flavoring.

Aromas of apple, lemongrass, golden raisins and white pepper lead to a super dry, structured palate of citrus, spice and subtle banana, with a lingering citrusy, peppery and floral finish. It earned 93 points at the 2019 Ultimate Spirits Challenge and is one of the most decorated piscos exported from Peru to the United States.

Sustainably harvested and hand-crafted, it is the classic base for a Pisco Sour, and equally good in a Chilcano with ginger ale and lime, or sipped neat.
