Harvest is one of Castle & Key's two rotating seasonal gins. After three years of seasonal releases, the team transitioned their favorite recipes to limited-time offerings that return year after year, so this recipe now stays consistent with each fall release. While the flagship Roots of Ruin gin leans bright with citrus and ginger, Harvest dials back the floral character in favor of a verdant forest profile. Its base comes from the distillery's high-rye mash of 63% rye, 17% yellow corn and 20% malted barley.
The botanicals are juniper, coriander, angelica root, star anise, cedar leaf, sumac, fennel and bay leaf. Soft pine, bay leaf and fresh cracked pepper lead the aroma, with berry compote, sweet anise, savory herbs and a touch of tanginess. The palate is fresh cedar and licorice, woodsy and earthy, with tart dark berries, cinnamon, fennel, clove and soft pepper, and the sweet, spicy finish gives way to woody and mineral notes with lingering heat.
