Castle & Key Restoration Rye is a Kentucky straight rye whiskey from the restored Old Taylor Distillery near Frankfort, made from 63% rye, 17% yellow corn and 20% malted barley and bottled at 106 proof (53% ABV).
Colonel E.H. Taylor built the Old Taylor Distillery, the iconic whiskey castle, in 1887, and it made whiskey until 1972 before decades of silence. In 2014 Will Arvin and Wes Murry bought the ruin and spent two years rebuilding it; the first new spirit ran in 2016. Restoration Rye, named for that revival, was the distillery's first whiskey release. Each year the team selects the best barrels of the season, blending each batch from pods of barrels grouped for a specific sensory profile, so every batch highlights a different flavor profile.
The unusually high malted-barley share gives a distinctive malty depth beneath classic rye spice, with notes such as honey, stone fruit, cinnamon and toasted oak varying from batch to batch.
The bold typographic label makes it a striking gift for rye fans.
American rye whiskey is made from a mash of at least 51% rye and aged in new charred oak, giving it a spicier, drier character than bourbon, with notes of pepper, herbs and baking spice.
