Castle & Key Roots of Ruin is an award-winning Kentucky dry gin made on a base of the distillery's own rye whiskey newmake, vapor-distilled with eight botanicals and bottled at 106 proof (53% ABV).
From the ashes rises a winning spirit: Roots of Ruin is Castle & Key's answer to one-note gins. Gone are the days of one-note gin: Roots of Ruin gives each of its ingredients a chance to shine, especially the three most unique to Castle & Key, chamomile, ginger and rosemary.
The gin starts from Castle & Key's rye whiskey newmake, a mash of 17% yellow corn, 63% rye and 20% malted barley. It is produced on a custom Vendome dual-basket gin still paired with a copper column still, with the rye-based spirit passing through vapor baskets loaded with juniper, chamomile, ginger, angelica root, lemon verbena, rosemary, licorice root and coriander.
Bright and floral with soft pine and baking spice on the nose, it opens with balanced citrus and lemon verbena for immediate freshness. The mid-palate shifts toward spicy ginger and sweet chamomile flower, while earthy angelica, rosemary and restrained juniper develop as it opens, ending in a smooth, creamy finish.
Its proof and herbal depth make it a superb Martini or Gin & Tonic. It also pairs beautifully with smoked salmon or trout, herbed goat cheese, lemon-dressed grilled asparagus or ginger-glazed pork belly.
