The premise of Chapter 7 Whisky is simple: each cask of whisky is unique. The wood, age, temperature and location in the warehouse all tell their own story. Large producers marry casks in big vats so the master blender can make them taste the same; Chapter 7, the brainchild of Selim Evin, thinks that is a shame. Evin travels to Scotland and Ireland to hand-select individual casks, and the Monologue series bottles each one on its own.
The Oloroso finish lays a magical layer of prunes, sultanas and spices on top of an already accomplished malt.
