Conniption American Dry Gin is a contemporary American gin from Durham Distillery in Durham, North Carolina, made with a two-step process that pairs traditional distillation with vacuum cold distillation, bottled at 88 proof (44% ABV).
Since 2013, Durham Distillery has merged traditional small-batch distillation with modern lab technology. It was the first distillery in the United States to employ vacuum cold distillation with rotary evaporators, and Conniption is the gin that technique was built for: supremely clean, crisp and complex.
The first step gives classic botanicals, including Indian coriander, angelica root, cardamom, caraway and juniper, a sophisticated footing through vapor infusion in a custom-designed German pot still. In the second, the fresh and floral botanicals, cucumber, citrus and honeysuckle flowers, are each vacuum distilled at room temperature to preserve their delicate aromas, then blended into the gin base.
The result is supremely balanced and approachable: not too juniper-forward, with cucumber and citrus up front and spice, juniper and rye-bread caraway underneath. The finish is smooth and cooling, with a lingering hint of cucumber and a light touch of orange zest. Many drinkers say it is the gin that converted them.
It is perfect for Martinis and Gin & Tonics, and versatile enough for almost any gin cocktail or for sipping neat.
